Dried Fruit Compote

Makes about 8 1/2-cup servings

Serve this delicious compote for breakfast on hot cereal or for dessert with Brown Rice Pudding (see recipe).

  • 1/2 cup raisins 
  • 1/2 cup pitted prunes 
  • 1/2 cup halved dried figs 
  • 1/2 cup dried peaches or apricots 
  • 1/2 cup white grape juice concentrate or apple juice concentrate 
  • 1 water, as needed 

Combine raisins, prunes, figs, peaches or apricots, and juice concentrate in a saucepan. Add just enough water to cover fruit. 

Cover and simmer 15 minutes. Serve warm or cold.
