Dried Fruit Compote
Makes about 8 1/2-cup servings
Serve this delicious compote for breakfast on hot cereal or for dessert with Brown Rice Pudding (see recipe).
- 1/2 cup raisins
- 1/2 cup pitted prunes
- 1/2 cup halved dried figs
- 1/2 cup dried peaches or apricots
- 1/2 cup white grape juice concentrate or apple juice concentrate
- 1 water, as needed
Combine raisins, prunes, figs, peaches or apricots, and juice concentrate in a saucepan. Add just enough water to cover fruit.
Cover and simmer 15 minutes. Serve warm or cold.
