Breakfast Sweet Potato Pudding
Makes about 3 1/2-cup servings
This breakfast will appeal to lovers of hot cereal and porridge. It takes just moments to prepare if you have cooked sweet potatoes or yams on hand.
- 1/3 cup rolled oats
- 1/2 cup soy- or rice milk
- 1 cup cooked sweet potato or yam
- 1 tablespoon maple syrup
- 1/4 teaspoon cinnamon
Combine all ingredients together in a blender and blend until smooth.
