Baked Tofu Sandwich
Makes 2 sandwiches
Baked tofu makes a wonderful snack or sandwich filling. It is firm and flavorful and comes in a variety of flavors. Look for it in the deli case at your natural food store or supermarket.
1 8-ounce package baked, flavored tofu
4 slices whole-wheat or rye bread
1 – 2 tablespoon stone-ground mustard
1 – 2 tablespoon Tofu Mayo or other dairy- and egg-free mayonnaise substitute
6 lettuce leaves
6 tomato slices
Cut tofu into 1/8-inch slices.
Spread bread lightly with mustard and Tofu Mayo or other dairy- and egg-free mayonnaise substitute. Top with slices of tofu, lettuce, and tomato.
