Staying Healthy & Keeping Cozy

As the cooler weather sets in, our bodies seem more susceptible to chills, illness, and fatigue. How do YOU stay healthy? One of my favorite things to do on a Sunday afternoon is cook up a big, flavorful, nutrient-dense pot of Root Vegetable & Herb Soup. It’s easier than you think and your body will thank you for the love and nutrition!

Healthful Bonus Tip: drink the vegetable and herb infused broth as a tea or healthy-giving tonic throughout the day.

Recipe for Root Vegetable & Herb Soup:

Combine: potatoes, parsnips, carrots, celery, turnips, onions, leeks, fennel (large pieces work well and take less time).
Add: fresh garlic cloves, parsley, sage, bay leaves, dill, himalayan salt, black pepper, cayenne pepper, spinach.
Boil: in a full pot of water until vegetables are soft.
Separate vegetables from broth and puree half of the mixture. You can add the remaining pieces to the puree! You can enjoy the remaining pieces separately as a side dish: sprinkle with turmeric, cumin, cinnamon, or your favorite spice.
