Orange Couscous Pilaf

Makes 4 servings

Couscous looks like a grain but is actually a type of semolina pasta that cooks quickly and makes a delicious side dish.

2 cups low-sodium vegetable broth
1 cup dry couscous
1 cup grated carrots
2 large oranges, peeled and cut into small chunks
4 teaspoons grated orange peel
2 tablespoons raisins
1/4 teaspoon salt
1/4 teaspoon ground cinnamon

Bring broth and couscous to a boil in a large saucepan over high heat. Add carrots, oranges, orange peel, raisins, salt, and cinnamon. Return to a boil, then turn off the heat, cover, and let stand for 10 minutes or until all liquid is absorbed. Fluff with a fork.
